CoffeeDog® Express Lollipop

Ingredients

  • 1 cup of CoffeeDog® Express
  • 1 box of yellow cake mix
  • 1 cup of ready-made chocolate frosting (add a variety with mocha or hazelnut)
  • 1 bag of milk chocolate Hershey bits
  • 24 sticks of lollipop sticks
  • 2 cups of nuts (hazelnut, pistachio, etc.)

Directions

  1. Prepare the cake using the instructions on the box. Allow the cake to cool after baking. Using your hands, crumple up the cake in a large bowl. Add the CoffeeDog® Express and mix well. Now add the chocolate frosting and mix again. Refrigerate overnight. If you are in a rush, 3 hours will be OK.
  2. Line a baking sheet with wax paper. Using your hands or an ice-cream scooper, form 2 inch balls. Insert a lollipop stick into each ball and refrigerate for 2 hours.
  3. Melt the chocolate in a double boiler on the stove and dip the chilled CoffeeDog® Express Lollipops into the chocolate and place back onto the wax paper. Put back into the refrigerator and allow to cool completely. For extra special appearance, drizzle the finished pops with melted white chocolate. Strawberries are very lovely with this hand held dessert.
